Al's "AHH YEAH" Biscuits

Whenever we go out to eat the usual question a couple would ask each other is, "Where do you want to go?" My answers vary from McDonald's to STARA (local Indian restaurant). Al's, on the otherhand will always be, "Red Lobster". Why Red Lobster? Because he just loves those cheese biscuits! We'd go there just for the biscuits. So I told him that if I was able to make the biscuits at home would that make him happy? He responds with an, "Ahhhh yeah". I was able to find a recipe so close to the cheese biscuits you'd think you were at Red Lobster looking at the giant fish on the wall. I keep the ingredients on stock for those emergency biscuit cravings. Hope you enjoy it as much as we do:


INGREDIENTS
2 cups buttermilk baking mix
2/3 cup milk
1/2 cup shredded Cheddar cheese
1/4 cup butter, melted
1/2 teaspoon garlic powder

DIRECTIONS
-Preheat oven to 450 degrees F (230 degrees C).
-Combine baking mix, milk and cheddar cheese in mixing bowl. Beat with wooden spoon till soft dough forms.
-Drop dough by spoonfuls onto ungreased cookie sheet. Bake 8-10 minutes until golden brown.
-Mix butter and garlic powder and brush over warm biscuits before removing from cookie sheet.

READY IN - 20 Min
Yields - 10 - 12 biscuits

Raising Children For The Lord

This weekend we were able to host a baby shower for my sister-in-law, Star and her new baby girl, Davniee. It was a sweet time of celebration with family and friends. I was able to read a poem that I found online. I's a sweet reminder to us as parents what our purpose is, as we raise up our children:

Raising Children For The Lord

It’s such an awesome privilege
And a big responsibility
God has given to us as parents
This wonderful opportunity
To raise our precious children
And instill into their lives
The wonder and amazement
Of the love of Jesus Christ
So they will learn to trust in Him
And worship and to pray
To love others with the love of God
And to honor and obey
As parents we’ve been entrusted
To raise them in God’s love
To be there to encourage them
When they feel like giving up
And to be there just to listen
When life deals some painful blows
And comfort them when they feel afraid
And when tears begin to flow
To share with them those joyful times
The precious moments in their lives
When doors begin to open up
And opportunities arise
Through everything they face in life
Let’s be there cheering them on
For we only have one chance at this
For childhood soon is gone
So let’s rely on Father God

Men or Women who trust in Him

Thin Egg Pancakes

Egg Pancakes?! To be honest I was a bit bit apprehensive about trying this recipe from allrecipes.com but I just had to try it. The results...they taste very similar to crepes.

My mom especially liked these. She said they remind her of her childhood. Every now and then when she comes over she'll ask me to make her some, even if it's in the late afternoon. The smile on her face when a stack of these are made just for her is worth putting this recipe in our family favorites list. Enjoy!

INGREDIENTS
5 eggs
1 cup milk
1/2 cup all-purpose flour
1/2 cup confectioners' sugar
1/4 cup butter or margarine, melted
salt and pepper to taste
DIRECTIONS
In a bowl, beat eggs until foamy. Add milk. Stir in flour and sugar just until blended. Add butter, salt and pepper. Pour 1/4 cup of batter into a hot greased 8-in. skillet. Cook for 2-3 minutes on each side or until lightly browned. Remove and keep warm. Repeat; stack pancakes with waxed paper or paper towel in between.

Since then, I've been working on expanding my culinary skills. I've tried a variety of recipes from different resources and I'll be posting some of our family favorites here. HAPPY BIRTHDAY ALRICK!

Today is my handsome son's birthday! I can't believe that Alrick is 7 years old! Where in the world did the time go? I can still remember the day God brought him into the world. It's one of the most joyful days of my life. Throughout these years, I've learned to really cherish my children. I'm always told to enjoy them because we only have them for a short period of time then they're off. It's absolutely true! Just yesterday I was changing Alrick's diapers, now he's a kid wanting to ride his bike around the block! I miss holding him in my arms and singing praise songs to him as he fell asleep but I look forward to the work that the Lord will do in his life.





Alrick, you have always been a joy in our lives! You bring so much laughter and love. Your father and I love you so much! Have a wonderful birthday!

This life we live has it's moments of trials and tribulations. There are days in my life when I feel so far from God. Days when I feel as if He's left me and the joy that once filled my heart is now running on empty. Why do these days come? The answer is simple, I lack Christ in my life. But God...through is everlasting mercy and compassion draws me to Himself once again. Through the great power of the Word He fills my cup so that it overflows! Oh, how wonderful is our Savior!
